Menu Plan... Here comes May!


Well let's review last week's menu.
Mrs. Ringle's Brisket was a smash. I have made it before, but it's been a long time. It made Sunday dinner plus leftovers for dinner another night, AND enough for hubby to take for lunch one day. WOO HOO! Love that.
We did not have the tacos scheduled for Thursday because we were invited to a neighborhood get-together, so we got a sitter and ordered pizza for son #3 and sitter. On Friday, son #3 spent the night camping out with a friend, so hubby and I had a DATE! A for-real, sit-down-and-talk-as-long-as-you-want, DATE!!! It was wonderful. And the Roast chicken that got moved from Wednesday to Saturday turned out delish. Overall, a pretty successful week.

So we've got some modifications/carryovers for this week. On the baseball schedule, there were no games scheduled for this week. But we didn't know that's because there's a TOURNAMENT!! Which means we don't know when we'll be playing, from day to day. So it could be interesting.

Sunday~
Ravioli lasagna (because I have ravioli on hand, and dh won't eat it plain, but he LOVES lasagna), tossed salad, french bread
Monday~ Tacos (from last week)
Tuesday~ Sandwiches and chips
Wednesday~ Flank steak, salad, bread with Italian dipping sauce
Thursday~ BBQ chicken in the oven, pasta salad, corn muffins
Friday~ Breakfast for dinner
Saturday~ Burgers & dogs on the grill, baked beans, and salad

Any of this could change due to the unknowns with the baseball schedule - we could be hitting a drive-thru somewhere... but we'll start with this plan. :) Check out more plans at Laura's!

April 20 - Menu Monday


Well, last week, I planned out the menus for the rest of the month. And we followed it to a tee!
This weekend, I made these peanut butter chocolate chip muffins, which my husband & son have been devouring. I also made tomato basil bread, which is scrumptious. Son #3 could care less about it, but hubby and I have been savoring it! Both these recipes incorporate whole wheat flour, and I am fortunate enough to have a grain mill, so I can grind fresh flour. This makes me feel a little better about letting my guys enjoy these treats.

So on to this week's menu:
Sunday~ Mrs. Ringle's Brisket, new potatoes, corn on the cob, rolls
Monday~ Open-faced sandwiches with leftover beef
Tuesday~ Out to dinner after ball game (We have a ballgame at 5:30 across town, while hubby & I get off at 5pm. So we'll grab something in a drive-thru somewhere after we dash to the game)
Wednesday~ Roast chicken, rice and gravy, tossed salad, biscuits (this is what I planned, but then my darling husband informed me that we needed to take a guest to dinner. So this menu will move to Saturday.)
Thursday~ Tacos
Friday~ Grilled cheese, tomato soup
Saturday~ TBA (Wednesday's menu will make its appearance tonight!)

Lots of MENUS!





I am so thankful for Spring Break. But it's back to work this week... and because we are facing a very hectic schedule for the rest of this month, I decided to do something I've not done in a while. I cooked & froze food for the remainder of the month, and planned it out.

So, here goes!

Sunday~ Easter Sunday... dinner with the family. Ham, turkey, beef tenderloin, scalloped potatoes, swiss beans, corn on the cob, and rolls. Yummmo!
Monday~ out to eat after the ballgame at Chick-fil-A
Tuesday~ BBQ sandwiches (pork loin in the crock pot w/a bottle of BBQ sauce), pasta salad, chips
Wednesday~ Turkey (which I roasted this weekend), stuffing, leftover swiss beans, rice and gravy
Thursday~ Breakfast for Dinner
Friday~ must goes
Saturday~ Burgers & dogs on the grill

Spring Break... and a menu





We are officially on Spring Break. And it's a very-much-needed break. Last weekend, a friend of mine died. Unexpectedly, and it was terrible. The funeral was this week, and I just couldn't bring myself to post anything...but this week, I am trying to get back to 'normal'... so here we go.

Sunday~ ds#2 and girlfriend have been here this weekend and will be leaving today. Before they go, we will grill beef tenderloin, have baked potatoes, and tossed salad.
Monday~ Temps are supposed to drop, so it'll be chillier than we'd like for spring break, but that's okay. Taco Night is the plan.
Tuesday~ Bourbon chicken (which I have made before and gotten rave reviews, and which actually has no bourbon), rice, and broccoli.
Wednesday~ Marinated flank steak (last time I made this, I actually cut the steak in half and left it frozen for a later use. It's perfect for just the 3 of us who are usually here), baked potatoes, tossed salad, bread with Italian dipping sauce.
Thursday~ Spaghetti & meatballs. Yea for old standbys.
Friday~ both hubby & I have lunch appointments, so it'll probably be something in the crockpot, like soup. Most likely, soup & sandwiches for dinner.
Saturday~ TBA. I'll be cooking in prep for the family's Easter dinner.
Sunday~ EASTER!
