The crazy busy life in which we have to eat Menu

This week.
Is.
Insane.

But here's what we're planning to eat.
Sunday~ grilled steaks, tossed salad with homemade ranch dressing, green beans, mushrooms (which was delish)
Monday~ I picked up chicken tenders at Publix - had to stay late at school and decided to go by the deli for dinner.
Tuesday~ out of town for the evening so Hubs & ds#3 will go out for Chinese (which they love and I don't)
Wednesday~ Hubs has a late meeting at school so ds#3 and I will fend for ourselves at home
Thursday~ late rehearsal for ds#3 and me, so it'll be something in the crockpot - probably a roast
Friday~ WHEW!!!! We made it. Leftovers of whatever's in the fridge.
Saturday~ Ds#3 bowls in the a.m., then to the Fair with his buddies in the afternoon.  Who knows what anybody will eat that day.


My baby boy is turning 14 in one week.  I'm freaking out a little about this.
He's 7 here.  Gosh, what a cutie pie.

From this summer.  His older brother on my left, and he is on my right... just has gotten taller than me this year and is growing so much - intellectually, socially, emotionally, physically and spiritually... I'm so proud, but I sure do miss that little boy!

Back in the saddle again!

I think it's been a month since I posted.
Boy, has life been crazy.

We've gone PALEO!!!
That's something I thought I'd NEVER say.
I've always been one to love my bread, pasta, and cheese.
However, after gaining 40 pounds over the past five years since I've had my thyroid removed, and hubs doing almost the same, we decided it was time to take charge and do something.... so we have.

To date, I've lost 20 pounds, and he's lost almost 30.  And we feel good.  More energized. Less exhausted at the end of the day with all our middle schoolers.  Ready to do something after work besides collapse on the couch.

So, we're continuing.
And ds#3 is coming with us, willingly!

Here's what we're eating this week:
Sunday~ hubs is out of town, so ds#3 & I had lunch with my parents: grilled chicken, baked sweet potatoes, and steamed broccoli.  My mom made regular red-skinned potatoes for my son who does not love sweet potatoes, and she also made him crescent rolls and chocolate pudding. :)  Baby steps.
Monday~ turkey tenderloin, harvest mash, pear and walnut salad, maybe some broccoli
Tuesday~ bacon-wrapped chicken with cabbage
Wednesday~ leftovers (hubs bowls)
Thursday~ Chili in the crockpot (after-school rehearsal for mom & ds)
Friday~ Pizza 'pasta'
Saturday~ TBD... probably something on the grill

We've discovered some interesting flavor combos and some yummy stuff!
Admittedly, the first two weeks were very difficult, trying to figure out what to eat.  But I'm totally loving The Foodee Project for inspiration!
