Better late than never... March's last menu

Last week was our Spring Break and we did many fun things....
going to buy this cheese definitely ranked as one of my favorite things.  And the best part is, we get to enjoy this deliciousness in our menu this week!





Sunday~ Steak on the grill, roasted potatoes, tossed salad topped with Jubilee Cheese
Monday~ Taco salads topped with Bama Jack Cheese (are you starting to see the trend??)
Tuesday~ SCOUT NIGHT ~ Roast in the crock pot, mushrooms, potatoes, green beans
Wednesday~ Breakfast for Dinner ~ Western omelets, bacon
Thursday~ Burgers & Dogs, Sauerkraut for hubby and oven-baked fries for ds#3 & me
Friday & Saturday ~ My guys go on a Campout... so whatever I want!!!!!

REAL cheese from a REAL farm

During this Spring Break week, I've done several things:

  • cleaned and sanitized the house due to ds#3's strep throat
  • shopped with my sister and had lunch at Lambert's (a splurge but so fun)
  • had a date night with hubby (mmmm...Athenian Chicken!)
  • and bought real cheese made with raw milk from a nearby farm

We visited the Sweet Home Farm this week, and all of us had so much fun.  We sampled all kinds of cheeses, ate some "Cheese Fudge", and brought lots home (as you can see).  Ds#3 perked up by the end of the week, and since he's had several days on antibiotics, he's no longer contagious, so we ventured out.  The weather was not beautiful, but we were so excited that we didn't care.

We've not really stuck to our menu plan this week, which doesn't surprise me, since ds#3 was sick and didn't have much appetite.  But we've had some adventures in spite of it, and I  can't wait to enjoy this luscious cheese in our meals this week!

SPRING BREAK!!!!!!! (and our menu...)

Oh what a relief it is to finally make it to Spring Break...
WHEW!
We've had some absolutely beautiful weather the past three days, and hubs has done lots of work getting our seedlings into the garden.  We are going to have serious produce!!! :)
Which is a good thing, because I've decided to try to eliminate (or at least minimize) processed foods from our diet.


Honestly, I make most of our food from scratch, so processed foods like boxed dinners, etc., do not make an appearance in our kitchen.  But we DO drink a lot of sweet iced tea (hey, we live in the south) and I use Splenda.  Which is highly processed.
So.
There's that.
(And it's going to be challenging to give that up.)
I *am* going to look into growing Stevia.


Also this week, ds#3 has a marvelous case of strep throat.
So I have been boiling washing all the linens in the house...and sanitizing everything...hoping he doesn't share.

So the plan for the menu looks something like this:
Sunday~ Taco salad using the romaine lettuce from our garden (ds did not eat at all)
Monday~ Breakfast for Dinner
Tuesday~ Sticky chicken, collards, baked potatoes, cornbread (never made it last week)
Wednesday~ DATE NIGHT!  Hubby and I are going out - woo hoo!
Thursday~ Spaghetti & garlic bread (ds#3 is scheduled to cook, but we'll see how he feels)
Friday~ Top your own pizza night
Saturday~ TBD... probably something from the grill

I'd love to hear from any of you who are trying to use less processed foods and more whole foods in your menus.

March Menu #2

Time is flying by...
Here's a quick menu update.
Last week went mostly according to plan, with the exception of one evening out to dinner at our local Mexican fave.  We wrapped up the week with a housewarming party for my grandparents.  Their home burned a year ago, and we are so thankful to have them back in their own space.

Our menu this week:
Sunday~ Taco salad, quesadillas.  For dessert: Ellie Krieger's Moist Mocha Cake. I modified the icing to make it a little more chocolatey and less mocha. ;)
Monday~ Quick meal with frozen pizza and tossed salad with the gorgeous romaine lettuce already growing in our garden
Tuesday~ Scout Night - Macho Nachos with leftover taco meat
Wednesday~ ds#3 cooks - Breakfast for Dinner
Thursday~ Veggie Plate - mac'n'cheese, green beans, collards, salad, corn on the cob, cornbread
Friday~ Chili in the crockpot (Marine Son is home for a brief visit)
Saturday~ TBD

March Menu!

It's full steam into March.
Isn't it amazing how time can seem to pass so slowly, then suddenly it's racing ahead?

We've had lots of cloudy, rainy, dreary weather this week.  But it seems like it's benefitted these guys...



This week, we joined SCOUTS!
So... on the night of our scout meeting, hubs wanted to go out to eat, and that pushed everything down a day.  On Saturday, it rained ALL DAY, and the temperature fell as it rained, so I decided it was a good day for soup.
Hubby is a sausage lover, so I made this Sausage and White Bean stew with Kale, from Better Homes & Gardens.  He loved the smokiness of the sausage in the stew, and the addition of kale was a new adventure for us!

On to this week:
Sunday~ BBQ chicken, baked potatoes, tossed salad, and loaded biscuits (with bacon and cheese)
Monday~ Beef tips and mushrooms with gravy, egg noodles, green beans
Tuesday~ Taco night!
Wednesday~ ds#3 is making dinner (with help, of course...) Chicken noodle soup with leftover biscuits from Sunday
Thursday~ Roast in the crock pot, mashed potatoes & gravy
Friday~ Spaghetti
Saturday~ Housewarming for my grandparents (their house burned a year ago, and we are celebrating their return!)
