Here comes May...and the menu

Life is always busy.
It's about to get REALLY busy.
We have more standardized testing this week.
Monday, we go to a ball game to support some former students.
Wednesday, hubs bowls and I shop for refreshments for a meeting.
Thursday, I have said meeting while ds#3 goes to a track meet.
Friday, ds#3 spends the night with a buddy to celebrate a birthday.
Saturday... I'm sure there's something....

And the following week, there is more testing, and two end-of-the-year concerts.
And so it goes.

And we still have to eat!

Sunday~ my parents came over for lunch.  Burgers on the grill, twice-baked potatoes, and a beautiful huge salad.  Cheesecake topped with fresh strawberries for dessert.  Yum!
Monday~ Sandwiches on gorgeous french bread made by our friend, Sunne Joy.
Tuesday~ using up some leftover beef.  Beef tips with gravy over egg noodles.  Served with green beans.
Wednesday~ hubs bowls.  Breakfast for dinner: pancakes & sausage with fruit.
Thursday~ Fend For Yourself
Friday~ Hubs & I will probably go out since ds#3 will be gone to a friend's house.
Saturday~ Fiesta!  Tacos, Mexican rice, homemade refried beans.  Ole!

April Menu #3

I got a ton of ideas listening to the fabulous women at The Mom Conference this week!  One idea was to plan theme nights for dinner, like:
*Comfort Food night
*Italian night
*Meatless or Breakfast
*Mexican night
*Pizza night
*Grill night
*Tradition night
I love the idea of having comfort food on Monday night because after that day back to work, who doesn't want a good comfort food dinner???  That said, here's our plan for the week:
Sunday~ Caesar salad w/ steak (leftover from the grill on Saturday) for lunch, Spaghetti for dinner
Monday~ Roast turkey, stuffing, green beans, Swiss chard (I ordered an organic turkey from our local farmers this week, so I roasted it on Sunday and we'll eat on Monday)
Tuesday~ Grilled steak, roasted potatoes, salad (Hubs found a sale on steak and he decided he *needed* some red meat!!)
Wednesday~ Breakfast for dinner - pancakes & bacon with fruit smoothies
Thursday~ Leftovers
Friday~ GOOD FRIDAY.  This is a day that my mom, sister & I traditionally have lunch out and spend the day together.  We are also contemplating going to the beach for a Good Friday service.  This means that dinner needs to be something simple and easy.  Chef Salads & Sandwiches.
Saturday~ Open-faced turkey sandwiches with mashed potatoes and sauteed chard.

On Easter Sunday, we'll eat at my parents' house - we're having fish  In the words of my father, "That's what Jesus ate."  But I doubt he ate it fried with cheese grits, and baked beans, which is how we're eating it!!


Our garden is prepped and ready for our sprouts.  We are so excited to get these awesome veggies into the ground!
Tomatoes... we love tomatoes!

Cabbage, Squash, Zucchini, Okra, Cucumbers, Broccoli... yum!

Eggplant, Bell Peppers, Heirloom tomatoes, Jalapenos, etc...

Herbs!  Rosemary, Thyme, Dill, Parsley, Basil, Oregano

Beautiful blueberries...gorgeous!

Full swing into April! Menu #2

April has come in like a lion... with lots of showers!  Which is great for the sprouts getting ready for the garden...



I love our big backyard garden.  Last year, we went to Hawaii to visit Marine Son who is stationed there, so just as it was getting in full swing, we left for 10 days.  This year, we'll be at home.  I can't wait to see those green things growing!

In the meantime, our Swiss chard and herbs are doing great.

My thyme is flowering, which is something that's never happened before - it's so pretty!

And here's the menu plan:
Sunday~ Bourbon chicken (which has no bourbon), rice, green beans.  Yum!
Monday~ Leftover spaghetti from Saturday
Tuesday~ Pancakes
Wednesday~ Beef tips w/ gravy, egg noodles, green beans
Thursday~ Nachos made with leftover chili
Friday~ Hot Dogs, homemade baked beans
Saturday~ TBD
Hubs is on meds for a bronchial infection, and ds#3 is dealing with sinus issues.  Here's hoping everyone is better for the weekend!!
