I love the idea of having comfort food on Monday night because after that day back to work, who doesn't want a good comfort food dinner??? That said, here's our plan for the week:
Sunday~ Caesar salad w/ steak (leftover from the grill on Saturday) for lunch, Spaghetti for dinner
Monday~ Roast turkey, stuffing, green beans, Swiss chard (I ordered an organic turkey from our local farmers this week, so I roasted it on Sunday and we'll eat on Monday)
Tuesday~ Grilled steak, roasted potatoes, salad (Hubs found a sale on steak and he decided he *needed* some red meat!!)
Wednesday~ Breakfast for dinner - pancakes & bacon with fruit smoothies
Thursday~ Leftovers
Friday~ GOOD FRIDAY. This is a day that my mom, sister & I traditionally have lunch out and spend the day together. We are also contemplating going to the beach for a Good Friday service. This means that dinner needs to be something simple and easy. Chef Salads & Sandwiches.
Saturday~ Open-faced turkey sandwiches with mashed potatoes and sauteed chard.
On Easter Sunday, we'll eat at my parents' house - we're having fish In the words of my father, "That's what Jesus ate." But I doubt he ate it fried with cheese grits, and baked beans, which is how we're eating it!!
Our garden is prepped and ready for our sprouts. We are so excited to get these awesome veggies into the ground!
