Frugal Friday Question


I don't have anything earth-shattering to share on this Frugal Friday post, but I do have a question that begs a frugal solution.
I have been given some vegetables - broccoli, carrots, cauliflower,and squash - that have already been cooked. Now this may sound deliciously delightful to some, but my family will not eat any of those veggies except broccoli. My husband will not touch cauliflower. No way. Childhood nightmares. So, here's my question:
What can I do with these vegetables???? I do not want to throw them away... I would bear the shame of wasted food when there are children starving in Africa, and even some in our own city. What can I do with them? Please, frugal mavens, help me!

A couple of suggestions... since your family will eat broccoli, how about a Brocolli Soup? You could puree some of the other veggies and add them to the soup. If you puree them well enough, your family won't even know that those hated veggies are in there.

Another option, again using pureed veggies is to add it to meat loaf. The puree will make the meatloaf wonderfully moist and again, your family won't even know that they part of the recipe.

The magical word here is puree!!

I would be pureeing the veggies and using them in muffins for some of the moisture. Or in soups or stews for thickener.

The squash would be good in a pumpkin muffin recipe and replace the pumpkin with the squash. :)

I'll third the motion for pureeing. There's a book out there called "Deceptively Delicious" that follows the same principal. Basically, you match up colors of things your family does like with things they don't, then mix in that puree. I think she even has a brownie recipe with a vegetable in it, and no one could tell the difference!
Do they like pumpkin bread? How about mixing the carrot puree in that?
BTW, here's my favorite cauliflower recipe:

Cauliflower Polanaise
Cook the cauliflower
Hardboil an egg and chop it up
Melt some butter in a skillet, and saute some crushed crackers or bread crumbs.
Mix up the bread crumbs and egg with the cauliflower.
Then make a big deal about how absolutely delicious it is and maybe someone will be willing to give it a try!
