March Madness Menu

Well, the first two weeks of March can only be described as crazy in our house.  But hopefully it's subsided a little.
Hubs pulled his hamstring in a rousing kickball game.  Then he could hardly walk.
Last week, I took my choirs to their annual Music Performance Assessment, and then to see "The Pirates of Penzance".  And, of course, there was testing.  I won't get started on that rant.

Kale and swiss chard

Savoy cabbage and collards
Our greens are exploding - we've got collards, savoy cabbage (the heads are just beginning to form), kale, and swiss chard.

And Hubs has bunches of seedlings that are sprouting like crazy.
green beans, various tomatoes and peppers
Not pictured: broccoli, zucchini, and cherry tomatoes.

Meanwhile, the household's got to eat.  So here's our plan for this week:
Sunday~ Ham slices, twice baked potatoes (sweet potato for me), collard greens (for hubs) and swiss chard (for ds & me).  Collards are too strong for me; however, our garden is bursting with greens, so we'll go with swiss chard.  Or maybe kale.
Monday~ Taco salads
Tuesday~ Crockpot day.  Bone-in chicken breasts (seasoned rotisserie-style), mashed potatoes, collards and/or broccoli.
Wednesday~ bowling night for hubs.  Leftovers.
Thursday~ Breakfast for dinner: eggs, ham, apples, blueberries, bananas (or fruit salad, maybe??)
Friday~ Leftovers or out to eat.
Saturday~ TBA... maybe something on the grill if the weather's nice.  It's been so dreary - gray and rainy.
